It depends on the concentration of salt in the water too much salt will make the egg float more and a little salt will make the egg float less.
Well chosen eggs are the kind that are fresh with shells free of cracks. It is important if you want a yolk which is yellow all through, old eggs given yolks with green linings. Three to five days of hatching of an egg is considered fresh. A bowl full of water can be used to check the freshness of an egg, if the egg sits on its side it is fresh, if its floats it should not be used and it stands on either side it is aged. Boiled eggs which are hard to peel are fresh.
Eggs straight from the fridge are likely to crack after boiling so you should bring them to room temperature before boiling. An egg from the fridge can be brought to room temperature by leaving them out at room temperature or running under hot water. Eggs at room temperature cook less minutes than eggs straight from the fridge.
To boil eggs, wash the egg to remove any attached particle and put the eggs in a pan add water to cover an inch above the eggs the pan should be deep to avoid spilling of water. Too much water will bring confusion with the cooking time while too little will give an unevenly cooked eggs. Place the pans on heat and after rapid boiling bubbles start coming out remove the pan out of the heat and let the eggs rest for about 15 to 20 minutes depending on the size in a covered pan. After the minutes are over place them in a bowl of cold water as it help in easy peeling. Hard eggs peel easy so if you want hard eggs place it in the refrigerator and boil them on the fifth or seventh day.
